Picture this: you're rushing out the door, trying to juggle work, errands, and maybe even a workout. In the midst of the chaos, having a batch of Oats Breakfast Bars ready to grab from the fridge can be a game-changer. Whether you're heading to the office, dropping the kids off at school, or hitting the gym, these bars are your reliable companion, providing a nutritious boost of energy to fuel your day.
But it's not just about convenience; it's about taste, too! Imagine sinking your teeth into a chewy, satisfying bar packed with the natural sweetness of dates, the nutty richness of peanut butter, and the hearty goodness of oats. Each bite is a symphony of flavours and textures, leaving you feeling both indulged and nourished.
And let's not forget about versatility. While these bars are undeniably delicious on their own, they also make for a versatile base. Crumble them over Greek yoghurt for a wholesome parfait, sandwich them with a layer of creamy peanut butter for an extra indulgent treat, or even crumble them up and sprinkle them over ice cream for a dessert that's sure to impress.
Personally, I also love these as a training snack. Carbohydrates are our main fuel source for moderate to high-intensity exercise, and the oats and dates in this recipe make them the perfect choice! I'm currently training for a half-marathon, so I have been making a batch of these weekly!
How To Soften Dates
Softened dates are the perfect ingredient to sweeten a recipe if you would prefer not to use honey or sugar. Plus, they provide some fibre, too.
Once you have made softened dates once, I guarantee you will be making them again!
Instructions: Transfer the dates to a pot. Pour enough hot or boiling water to cover them. Allow them to boil for about 5 minutes, then simmer for another 5 minutes gently. Drain the water from the dates. The dates should now be soft and ready to be used. Mash them with a fork to make a versatile sweet paste.

5 Ingredient Oat Breakfast Bars
Ingredients
- 2 cups pitted medjool dates boiled for 5-10 minutes to soften and then drained
- 3 cups oats (instant oats work well here as they bind into the mixture better but any type of oats will do)
- 1 cup drippy peanut butter (If its not drippy the mixture will be too dry)
- 1 cup almonds (flaked)
- ½ teaspoon salt
- (Optional) Melted Dark Chocolate to drizzle on top
Instructions
- Prepare the Dates: Begin by boiling the dates for 5-10 minutes in a pot, then drain them. This process helps soften the dates, making them easier to incorporate into the recipe. Then mash them well with a fork so they form a nice sticky paste.
- Mix the Ingredients: In a large mixing bowl, combine the boiled dates, oats, drippy nut butter, almonds, and salt. Mash and mix all the ingredients together until they form a dough-like consistency.
- Form the Bars: Transfer the mixture onto a baking sheet lined with parchment paper. Flatten the mixture until it's about 1 inch thick, ensuring it's evenly spread out. This step sets the foundation for your bars, so take your time to shape them to your desired size and thickness. Note: To make sure your bars hold together well you need to spend time really pressing them down here. Otherwise they will crumble a lot when sliced.
- Add a Finishing Touch: If desired, drizzle melted chocolate over the top of the bars for an extra touch of indulgence.
- Chill in the Fridge: Place the baking sheet with the formed bars in the fridge and let them set for at least 1-2 hours. This chilling time allows the ingredients to firm up, making it easier to cut them into individual bars later on.
- Slice and Serve: Using a sharp knife, cut the chilled mixture into individual bars. To make cutting easier, dip the knife into a mug of hot water between each slice. This technique helps prevent the mixture from sticking to the knife, ensuring clean and uniform cuts.
