Welcome to the April 2024 edition of "At Home with a Dietitian", the first of this format of blog posts.
In these monthly blog posts, I plan to share what I’m up to when I’m not in the kitchen or in front of the camera.
Each month, I’ll share snippets of what I’m working on, habits I’m cultivating, things bringing me joy, books/TV shows/podcasts I’m enjoying, and more. Think of it as stream-of-consciousness blabbering meets a semi-curated list of recommendations meets a life update!
This month, I’m sharing a *BIG* life update (I got engaged), how I’m resuming an energizing habit, and a recap of fun projects I worked on this month!
Get cosy with a cup of tea or coffee, and come hang out for a few minutes 🙂
Big News! I'm Engaged.
You may have seen it on Instagram by now, but I am a fiance! I can't put into words how happy I am. Ever since it happened, I feel like I have been floating on cloud nine and living in a bubble of love.
We kept it very quiet for a while, only telling close friends and family. Then we let it all spill and had a big engagement party at the weekend! It was so much fun celebrating with everyone, and it made me very excited about the wedding to come, which will be a much bigger party.
We are flying home to Ireland at the start of May and I CANNOT wait to start wedding dress shopping and viewing wedding venues. Safe to say, we have a jam-packed schedule for the next few weeks. I look forward to sharing my wedding dress shopping experience and more wedding bits here on the blog.
Running Update
Over the last few weeks, I have slowly but surely started to fall back in love with running. I used to run a lot when I was in college (almost ten years ago!), but for some reason, I stopped. Possibly because I got really into resistance training in the gym (which I still love), but now I am balancing both, and I honestly feel fitter now more than ever. I have been going to MAAC track with Mid Atlantic Athletic Club on Wednesday evenings, and that has been a huge help. It is such a welcoming community, and the interval training has made my running times improve massively!
I have also signed up for the Bermuda Day Half Marathon on May 24th, so I have no excuses now when it comes to getting out in the evenings for a run. This inspired me to write a full blog post on how to fuel for a half marathon, which I really enjoyed researching. I'm looking forward to putting the nutrition strategies to the test on the big day.
In The Kitchen
I have been doing a lot of baking and cooking over the last few weeks. We hosted our engagement party at our own place, which meant I had a fun opportunity to test out my hosting skills. We ordered lots of pizzas to make life easier for ourselves, but I made lots of accompanying dips and side salads from scratch. So many people complimented them, which is always music to my ears. I also made a big batch of Rocky Road and Mars bar cakes, which everyone devoured.
Other Things I've Been Loving
Tuck Shops Cakes 🎂
For the engagement party, I ordered a carrot cake from Tuck Shop. Their cakes are always amazing, and it did not disappoint! Honestly, I was almost more excited about the cake than my engagement ring.
What I'm Watching
I find it very hard to find a show on Netflix that I like, so I am delighted they now have all the old Sex and the City episodes available. It is such an easy and classic show to watch.
Looking into May
Next month is going to be very exciting! 💫
We have a night away booked in Castlemartyr Resort and Mount Juliet in Ireland (eyeing them up as potential wedding venues). We have ring shopping in New York at both Tiffany's and Harry Winston. And we have lots of exciting catch-ups planned with family and friends whilst we're at home.
I'm looking forward to stepping away from the laptop for a bit. However, I've been super organised over the last few weeks, so I have my usual content (YouTube videos and recipe reels) all scheduled to continue while I'm at home.
And that's all I have time to recap for now, I'll see you again next month!
