Crispy Air Fryer Tofu

The tofu takes 20 minutes and is the perfect low-cost, high-protein ingredient for a weeknight dinner. I recommend investing in an air fryer to the majority of my clients. It cooks whatever you place in it as if it were being fried, except with air. So it's high in taste but still very healthy. I adore my air fryer, which is the Ninja Foodi. This is more than just an air fryer. It's also a slow cooker, pressure cooker and more all-in-one. I love this because instead of having multiple kitchen appliances taking up space in my cupboards, I only have one that does everything!
Peanut Tofu Stir Fry
Equipment
Ingredients
- 1 red pepper
- 1 head of broccoli
- 3 spring onions (roughly chopped)
- 2 egg noodle nests
- 2 servings my air fryer crispy tofu
Stir fry sauce
- 1 tablespoon peanut butter
- 2 tablespoon soy sauce
- 1 teaspoon garlic puree
- 1 pinch chilli flakes
- 1 teaspoon rice vinegar
- 1 tablespoon lime juice
- 2 teaspoon honey
- 1 handful cashew nuts (chopped)
Instructions
- Make the sauce by mixing all the stir fry sauce ingredients together
- Make the air fryer tofu as per the recipe
- Cook the noodles to the packet instructions
- Stir fry the red pepper, cashew nuts, spring onions and broccoli for a few minutes. (I like to put the broccoli in a bowl with 2 tablespoon of water and add to the microwave for 3 minutes before stir-frying to make sure it is tender).
- Simply assemble everything together and enjoy!
