This fresh, herby corn summer salad is great for barbeques or garden parties. What I also love about this salad is that it includes many common pantry staples, so it tends to be something I can throw together quite quickly if needed.
It's also a great meal-prep salad, perfect for salad jars.

This post is all about how to make a corn summer salad.
I love using a combination of herbs as the greenery in a salad for extra flavour and antioxidants. The fresh herbs and all the veggies can be interchanged depending on what you have in the fridge, but this combination works a charm.
Did you know cilantro is called coriander in Ireland? And arugula is called rocket? I used to find this confusing; thankfully, I have gotten much more used to it. I know coriander/cilantro is a bit of a love-it-or-hate-it ingredient. I personally LOVE it, but let me know in the comments below what you think.

Ingredients
- 1 cup of fresh basil roughly chopped
- 1 cup fresh coriander/cilantro roughly chopped
- 2-4 cups of rocket/arugula
- 1 tablespoon fresh chopped chives
- 1 can chickpeas, drained 14 ounces/400g can
- 1 can sweetcorn, drained 14 ounces/400g can
- 2 cups cherry tomatoes halved
- 2-3 Persian cucumbers, diced or 1 regular cucumber
- 1 cup feta cheese, cubed
- 1 avocado, diced
- 1 shallot, finely chopped
Vinaigrette
- 3 tablespoon extra virgin olive oil
- Two tablespoons of lemon juice
- the zest of 1 lemon optional
- 1 tablespoon of honey
- 3 tablespoons red wine vinegar
- 1 pinch crushed red pepper flakes
- pinch of salt and black pepper to season
Instructions
- To make the salad: Add the basil, cilantro, chives, chickpeas, corn, tomatoes, and cucumbers to a large bowl.
- To make the vinaigrette: Add all the ingredients to a jar and shake well to combine. Alternatively, add them all to a bowl and whisk together.
- To serve: Pour the vinaigrette over the salad, tossing to combine. Top the salad with avocado and feta.
- Eat and enjoy!
