- Peach Ricotta Toast
Growing up, peaches were never really a staple in my house—my mom mostly stuck to more familiar fruits like apples and bananas. It wasn’t until a few years ago that I truly discovered how incredible a perfectly ripe peach can be. Now, I’m completely hooked! There’s something about biting into a juicy, sun-kissed peach in the middle of summer that feels like pure bliss. And when you roast them, it brings out an even more special, intense flavour that’s simply irresistible.

✅ Why this recipe is Dietitian-Approved
Better Breakfast Choice: If you’re craving something sweet for breakfast, this is a healthier option compared to most sugary cereals. It offers natural sweetness from the fruit, with the added benefit of protein and fibre to keep you full longer.
Balanced Nutrition: Combines protein, healthy fats, and fibre for a satisfying and nourishing meal.
Rich in Calcium: Ricotta provides a good source of calcium, supporting bone health.
🧀 What is ricotta, and is it healthy?
Ricotta is a creamy, slightly sweet cheese made from the leftover whey after making other cheeses. It’s packed with protein and calcium, making it a great choice for a healthy diet. Unlike some other cheeses, ricotta is lower in fat and calories, which makes it perfect for those looking to keep things light. Plus, its creamy texture makes it a versatile ingredient in both sweet and savoury dishes!
🍑 When are peaches in season?
Peaches are at their peak during the summer months, typically from June to August in most regions. This is when you'll find them at their juiciest and sweetest, perfect for enjoying fresh or incorporating into recipes like this Peach Ricotta Toast.
If you're making this recipe outside of peach season, you can still enjoy it by using frozen peaches or high-quality canned peaches packed in their own juice—just be sure to drain them well before roasting.
🥣 Tips for choosing ingredients
Below are some ingredient notes. Be sure to check the printable recipe card at the bottom for exact ingredient measurements and the full recipe.
Peaches—Ripe peaches are sweeter, so look for a ripe peach. They should be slightly soft to the touch but not mushy. I suggest using yellow peaches, which have firmer flesh and hold up better to being cooked than white peaches. If peaches aren’t in season, you can use frozen or even canned peaches (just make sure they’re not packed in syrup).
Olive oil - I use olive oil as a healthy fat alternative to butter in this recipe, giving it a Mediterranean twist and reducing the intake of saturated fats, which can negatively impact heart health. If you prefer a milder flavour, avocado oil is a great alternative here.
Ricotta - Opt for a high-quality, whole-milk ricotta for the creamiest texture.
Honey - to add some sweetness to the recipe.
Lemon - We use both lemon juice and zest in this recipe for the most citrus flavour.
Pistachios - Shelled, unsalted pistachios are ideal. They add a lovely crunch and a boost of healthy fats.
Bread - Go for a good-quality whole-grain or sourdough bread. Whole grains add extra fibre and nutrients, while sourdough has a lovely tang that pairs beautifully with the sweet peaches.
Mint leaves - optional but the perfect finishing touch in my opinion.
🍴 Substitutions for different dietary needs
- Gluten-Free: Simply swap the whole-grain bread for your favorite gluten-free bread.
- Dairy-Free: Use a dairy-free ricotta alternative made from almonds or cashews. You could also use a whipped tofu. To keep it vegan, replace the honey with maple syrup.
- Nut-Free: If you’re avoiding nuts, try using sunflower seeds or pumpkin seeds in place of the pistachios for a similar crunch.
- Don't like ricotta? You can use Greek yogurt if you prefer. Use whole milk Greek yogurt as the low-fat won't be as creamy and won't whip as well.
🔧 How to make Peach Ricotta Toast
Below are the instructions for making this Peach Ricotta Toasy Recipe with some visuals that I hope are helpful! Don't forget to check out the recipe card at the bottom for the full recipe
Step 1: Preheat your oven to 400°F (200°C). Toss the peach slices with olive oil and a pinch of salt, ensuring they are all evenly coated. Spread them out on a baking sheet lined with parchment paper and roast for 15 minutes, flipping halfway until they’re soft and caramelized.
Step 3: Whip until it’s light and fluffy. You can use a hand mixer or whisk by hand.
Step 5: Toast your slices of bread until golden brown. You can do this in a toaster, on a grill, or in the oven. Spread a generous layer of the honey-whipped ricotta on each slice of toast.
Step 2: Combine the ricotta, lemon juice, lemon zest and honey in a bowl.
📦 Storage tips
This Peach Ricotta Toast is best enjoyed fresh, but if you have leftovers, you can store the roasted peaches in an airtight container in the fridge for up to 3 days. The honey-whipped ricotta will also keep for three days in the fridge. Just assemble your toast right before serving to keep the bread from getting soggy.
💪🏻 Tips to Increase the protein content
If you’re looking to boost the protein content of this Peach Ricotta Toast, here are some easy ways to do it:
- Add Greek Yogurt: Mix a spoonful of Greek yoghurt into the ricotta before whipping. Greek yoghurt is high in protein and adds a nice tangy flavour.
- Use Protein-Rich Bread: Opt for a bread high in protein, such as one made with sprouted grains or seeds.
- Top with Nuts or Seeds: While the recipe already includes pistachios, you can increase the protein further by adding a mix of other nuts or seeds, such as chia seeds, hemp seeds, or almonds.
- Include a Protein Powder: Mix a small scoop of unflavored or vanilla protein powder into the ricotta. Just make sure to adjust the honey to balance the flavour.
- Serve with a Side of Eggs: Pair your toast with a hard-boiled egg or a small omelette for an extra protein boost.

💡 Variations of Peach Ricotta Toast
As with most of my recipes, this peach ricotta toast is very customizable. You can make them with whatever you have in your fridge or what's currently in season. Here are a few ideas:
Fig & Honey: Replace the peaches with sliced fresh figs. Figs have a naturally sweet, jammy flavor that pairs wonderfully with ricotta.
Savory Spin: For a savory version, skip the honey and peaches, and top the ricotta with sliced avocado, cherry tomatoes, and a drizzle of olive oil. Sprinkle with sea salt, cracked black pepper, and fresh herbs like basil or chives.
Go nuts for nuts: If you’re a fan of nuts, you can experiment with different types like walnuts, almonds, or pecans in place of the pistachios. Each adds a unique flavor and texture to the dish.
Sweet & Spicy: Add a kick by drizzling a bit of hot honey over the roasted peaches. The combination of sweet and spicy is perfect for those who love a little extra heat.
🙋♀️ FAQs
Yes, you can substitute ricotta with other soft cheeses like mascarpone, cream cheese, or even cottage cheese. Each will give the toast a slightly different flavour and texture, but they all work well.
To lower the recipe's calories, use part-skim ricotta instead of whole-milk ricotta and reduce the amount of honey. You can also use a lower-calorie bread option if desired.
If peaches aren’t in season, you can use frozen peaches (thawed and drained) or high-quality canned peaches. Alternatively, try using other fruits like apples, pears, or plums.
📖 The Recipe
Peach Ricotta Toast
Ingredients
- 2 ripe peaches sliced
- 1 tablespoons light olive oil or any neutral flavoured oil
- A pinch of salt
- ½ cup ricotta cheese
- 1-2 tablespoons honey plus extra for drizzling
- juice and zest of half a lemon
- 2 tablespoon pistachios chopped
- 2 slices of whole-grain or sourdough bread
- Fresh mint leaves optional, for garnish
Instructions
Roast the Peaches:
- Preheat your oven to 400°F (200°C). Toss the peach slices with olive oil and a pinch of salt making sure they are all evenly coated. Spread them out on a baking sheet lined with parchment paper and roast for 15 minutes, flipping halfway until they’re soft and caramelized.
Whip the Ricotta:
- While the peaches are roasting, combine the ricotta, lemon juice, lemon zest and honey in a bowl. Whip until it’s light and fluffy. You can use a hand mixer or simply whisk by hand.
Toast the pistachios (optional)
- As your oven is going to be in use with the peaches you can toast your pistachios using a non-stick skillet or frying pan over a hob or stovetop. You do not need to put any cooking spray or butter in the skillet. Roasting the nuts in a dry skillet is more effective.
- Use a medium heat and toast for 6 to 8 minutes, depending on your stove. Stir continuously to avoid burning. The pistachios will give off a nutty, roasted smell when they are done. Remove the pistachios once they turn light brown.
Toast the Bread:
- Toast your slices of bread until golden brown. You can do this in a toaster, on a griddle, or in the oven.
Assemble the Toast:
- Spread a generous layer of the honey-whipped ricotta on each slice of toast. Top with the roasted peaches, then sprinkle with chopped pistachios. Drizzle a little extra honey on top, and garnish with fresh mint leaves if you like.
- Enjoy your Peach Ricotta Toast immediately!
