This recipe is super simple! It’s just cucumbers mixed with an easy marinade made up of ingredients most of us already have in our pantries. The only thing special about this salad recipe is how you cut the cucumbers.
This is a delicious snack or a great sushi or poke bowl addition for a complete meal!
This post is all about the viral tiktok cucumber salad and how to make it.
Variations
This spicy Asian cucumber salad marinade is delicious as is, but here are some extras that you can add in to make it even more special!
- Roasted peanuts—Add peanuts for a crunch and Thai-inspired flavour. Even a tablespoon of peanut butter would work.
- Fish sauce – This secret ingredient adds a unique umami flavour to elevate your salad. It's a must-try for any Thai cuisine enthusiast.
- Lime juice—Lime juice pairs perfectly with peanuts for a Thai-inspired flavour. It can also be used in addition to or as a substitute for rice vinegar.
- Cilantro – Add chopped cilantro for a more earthy flavour.
- Ginger – Freshly grated ginger will add some Korean flavour.
- Chilli paste or Sriracha—Add a dab of chilli paste or Sriracha sauce to crank up the heat. Chilli oil can also be used.
- Green onion – Finish this salad recipe with a sprinkle of sliced green onions.
Storage information
Store this easy cucumber salad in the refrigerator for up to 5 days. This salad is best on day 2, as it gives the Asian marinade time to seep into the cucumbers. This makes it an excellent salad to make ahead and meal prep.
I do not recommend freezing this salad or cucumbers. Cucumbers are mostly made up of water, so they don’t freeze and thaw well.
Serves 4:
Ingredients:
- 8 Persian or Japanese cucumbers (these look like mini cucumbers)
- 2 tablespoon soy sauce
- 2 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon honey or maple syrup
- 2 garlic cloves minced
- chilli flakes as desired
- sesame seeds
Instructions:
For The Cucumbers:
- Cut the ends off the cucumbers, then place them between chopsticks and make small diagonal cuts all along the cucumber, about 0.5 - 0.75 cm in spacing. The chopsticks will prevent you from slicing all the way through the cucumber. Flip the cucumber to the other side and make small horizontal cuts. Line up each cut with the previous cut mark to make the perfect slinky shape. Repeat on each cucumber to create a spiral. CHEAT OPTION: If you have a spiralizer, you can use it to get the fancy cucumber shape.
For The Dressing:
- To a bowl, add the minced garlic, soy sauce, sesame oil, rice vinegar, toasted sesame seeds, red pepper flakes and your sweetener of choice. Whisk until well combined.
Assemble
- Pour the dressing over the cucumbers. Top with additional sesame seeds or chilli flakes and enjoy.
Spicy Cucumber Snack
